Ingredients:

1 large washed Spring Green leaf (with the spine trimmed)*

1 mashed Avocado with a small amount of Coconut Milk to make a dressing

A selection of Carrot, White Cabbage, Red Cabbage, Sweet Pepper and mixed Salad Leaves

A few Sun-dried Sultanas (if you wish to add a slightly sweet taste)

A squeeze of fresh Lemon

 

Method:

Wash and chop the Vegetables and Salad leaves 

Smear the Avocado and Coconut Milk dressing over the Spring Green leaf

Add the raw Salad and Vegetables

Squeeze a good amount of fresh Lemon Juice over the top.

Fold like a normal wrap and serve.

 

* To trim the spine, turn the leaf over, slightly fold the leaf to expose the spine and with a sharp knife, carefully cut away some of the thick part of the spine.
