Ingredients:

1 RAW Nori sheet or 1 Spring Green Leaf

1/4 of a small Cauliflower grated (This acts as the rice)

1 small sweet Apple grated

1 Avocado

Freshly squeezed Lemon Juice

A few raw Peanuts

Small handful of raw Mixed Nuts

A handful of washed and prepared crunchy raw veg

(I have Beansprouts, Carrots, Spring Cabbage, Red Pepper, Red Onion & Sweetcorn)

 

Method:

Place the grated Cauliflower, grated Apple, Avocado, Lemon Juice and Peanuts into a small mixing bowl and blend together

Place the raw Nori sheet or Spring Cabbage Leaf on a plate and add the filling on 2/3rd’s of the sheet

Slightly wet the end of the Nori sheet that doesn’t have the filling, you just need to dip your finger in water and run it along the edge (this helps it to stick closed)

Roll like a normal wrap.

Cut into two and serve with the Mixed Nuts and Vegetables.

 

If you want to you can add the vegetables to the wrap, you can also use the filling without the wrap and eat it with other food.
